The amount of attack rate reduction depends on the unit. IIRC goliaths don't get an attack rate penalty at all.
But it looks awesome when your opponent is oozing green. |

I tried to win a ZvP with only queens and workers once. Didn't go very well. |

Dunno about ensnare, but parasite and broodling have both a very long range when you can see the unit. Actually ensnare outrange marines but not as much as the others queens spells. |
