The question is, how do you distinguish a callstation from a player that is bluffable?

Play with them more. You shouldn't bother bluffing people you don't know.
That river bet is incredibly weak though, you probably could've taken it away there... Unless he's a huge calling station (which you would probably have found out if youd played with him for any length of time) he's folding top pair or whatever else he might have, you can reasonbly assume he has a weak K by the way he played preflop/flop/turn so unless he has KJ he's probably very willing to fold to a nice raise, and even KJ is probably folding.
