Any card that will improve your holding well enough to make it profitable (at least by your definition) for that given hand. For example, if you are holding 56 on a 3-4-K flop, a 2 or a 7 on the turn or river would make you a straight, and therefore every 2 and 7 still left in the deck are OUTS for you. In this case, you have a total of 8 outs (4 x twos, and 4 x sevens).
