You could probably just bring a watch to the show and notify your opponent that your just going to play a game theoretically optimal strategy and deviate from it to steal only if you think its profitable.

I think stealing at the end every time is the +EV choice, cause your opponent is probably gonna try to steal most the time anyway so fuck them, and if they don't you scoop.
