use veggie oil or my personal fav, grapeseed oil, better for your body.

are you using a nonstick Teflon pan or a stainless steel pan? the stainless steel pans can tend to suck balls for frying eggs since eggs can stick to it and oil can pop up everywhere like you described. Make sure the heat isn't too high or too low, gotta find the right temp. Usually it's the med or slightly lower setting on the electric stove. Also on a Teflon pan it's easier to clean, just wipe it down and it's no mess ez pz.

Let the pan warm up before you put anything in it (throw water on the pan and if it siZZles, it's ready). Keep the heat low, like ~ lvl 3, ...Add oil and shortly after add eggs...make sure that water isn't splashing into the pan, etc.

im almost positive the reason for the exploding is because there was some water in the pan. when you heat water and oil together, that will happen. If you just washed the pan and it wasn't properly dried, make sure to wipe it down or to heat the pan and make sure the water has evaporated first before putting in the oil.

ya i always used evoo instead of vegetable oil just for health reasons, but i might check out grapeseed now.

yeah i was probably putting oil in too soon, basically i was heating the pan for like a 30 seconds, then put the oil in, then after a few minutes put the egg in (no idea why i did it this way)

hmm, yeah i did wipe the pan down before using it but maybe putting the oil in too soon there was still moisture or something that didn't evaporate, makes sense.

I started using a couple dabs butter instead of oil with my omelets...that's the best advice I've ever read on this site!!
